Artichoke is rich in Caffeoylquinic acids, polyphenols and inulin. Caffeoylquinic acids tone up the lymphatic circulation promoting lymph drainage. Hence, swelling caused by fluid retention is reduced. At the same time, polyphenols and inulin control fat storages in the body, affecting their distribution in adipose tissue and stimulating the process of lipolysis.
